This needs to be refrigerated overnight, so start making the day before you want to cook!
1 cup soft margarine (canola is good, no animal products)
3/4 cup white sugar
3/4 cup brown sugar
2 teaspoons of "Organ No Egg" mixed with 4 tablespoons of water (=2 eggs)
1 teaspoon vanilla essence
3 cups plain flour
1/2 teaspoon baking powder
1/2 teaspoon salt
food colouring
Blend margarine and sugar until light and creamy. Then add 'no egg' and vanilla, beating well. Sift flour, baking powder and salt together and fold in gently.
Divide dough into 4 or more parts, and colour each part a rainbow colour (you might want to wear gloves for this part if you don't want to get too messy!)
On baking paper, pat/roll each colour into a strip about 0.5-1cm thick (helps to use a bit of flour). Place the rainbow strips side by side and press them together.
Wrap in waxed paper and refrigerate overnight.
Slice the layered block into 0.5-1cm slices (thicker if you want, but they do spread a bit). Place on cookie sheet coated with baking paper, leaving enough room for them to spread, and bake for 10-15 minutes (or until the bottoms are golden brown) in a 180'C oven.
Remove from oven when done, allow to cool, and enjoy!

I thought they were pretty cool, the kids were amazed, they weren't sure whether it was play doh or biscuits!
