Margaret's Greek bean salad

This is a recipe from Rachel's boss Margaret (who is actually Italian, but calls this salad a greek one!). All the quantities depend on personal taste, rather than anything pre-measured. Margaret uses lima beans because they have their own taste, but I guess it would be possible to use any kind of bean mix! (though I haven't tried it!)

lima beans
finely chopped parsley
finely chopped fresh garlic
finely chopped fresh chili (optional)
lemon juice
good quality olive oil
white vinegar

Cook lima beans for approx. 45 min- 1hr. (if you are using other dry beans, they will need to be soaked first before cooking).
Drain.
While warm, but not hot, dress with finely chopped parsley, garlic and chili; lemon juice, vinegar and olive oil.
It can be eaten warm or cold (though the oil does tend to congeal a bit when refrigerated).
